California Girl Lemon Bars

Okay, ladies! We're trying something a little different on the Shoppe blog this morning.  We're sharing our very first RECIPE and we are a little too excited about it...introducing the California Girl Lemon Bar (Gluten free + dairy free deliciousness).

Our founder, Jess, has a ton of food intolerances.  And coincidentally, her best friend Maya is a food scientist who loves adapting recipes (can we say match made in girlfriend heaven?).  They spent last weekend playing around in the kitchen and came up with the most DELICIOUS gluten free/dairy free lemon bar recipe (perfect for the California girl looking to bring something extra special to a summer barbecue).

Don't get us wrong- it's not like this dessert is the healthiest option in the world, but it's certainly worth it. Full disclosure: you will eat more than you are planning on- so make sure you double up on your cardio for the week to balance it out! ha.

4 tbs Coconut Oil
1 cup oats
1 cup almonds
1/4 tsp salt
2 tbs sugar
1tbs maple syrup

1.  Put all dry ingredients in blender. Blend until smooth.  
2.  Melt coconut oil on stove or in microwave.
3.  Combine all ingredients together and stir with spatula.
4.  Pour into 9X9 baking sheet and bake at 350 for 15 minutes. 
5.  Let cool slightly before filling.

3 large lemons
4 eggs
1 tbs tapioca starch OR 1tbs corn starch
1 1/4 cup sugar

1.  Zest three lemons
2.  Add all of the ingredients together.
3.  Whisk! 
4.  Pour on top of the crust and pop back into the oven for 15-20 minutes.

Blend together the oats and almonds for the crust:

Whisk together lemon bar filling. Rainbow whisk not required, although highly encouraged:

Add the eggs:

Pour in lemon bar filling:

Bake and TA-DA! Lemon bars are ready. We suggest chilling them a bit before digging in:
